Pork Afritada

I call this recipe pork afritada because it is similar to afritada but with a twist hehe.

Ingredients:
1 and 1/2 of pork (no bones) cut in cubes
3 small sweet potatoes (white yams are great too) cubed
4 big tomatoes cut in cubes
1 small bell pepper cut in strips
2 tablespoons of chicken bouillon
5 cloves of garlic minced
1 half onion chopped
1 tablespoon of oil
salt
pepper

Directions: (Approximately 30 -35 minutes)
Heat oil on a skillet. Cook onion and garlic until garlic turns slightly brown. Add pork and wait until it turn light brown. Once it is slightly brown add the tomatoes. Simmer for about 15-20 minutes. Add the sweet potatoes and bell pepper and wait until tender. Add the bouillon and salt (to taste). Seasoned it with pepper and you're done.


I live the sweet potatoes instead of the regular potatoes because they taste a little sweet not bland like the regular and I use fresh tomatoes replacing the tomato sauce because I like the taste better. Instead of tomatoes you can use tomato sauce. It all depends on your taste buds.
